Makes a great healthy lunch or snack and goes great as a side dish for dinner!
Yield: 2 servings
Preparation Time: 10 min
1 | carrot, grated | ||

1 | stalk | celery, chopped | |
|
|||
1 | tomato, finely chopped | ||
|
|||
1 | cucumber, finely chopped | ||
|
|||
1 | Tablespoon | (your favorite) salad dressing | |
|
|||
Pinch of salt | |||
|
|||
2 | leaves | romaine lettuce | |
|
In a small bowl, combine grated carrot, chopped celery, tomato and cucumber, add dressing and salt and mix well.
Spoon over lettuce leaf and serve.
